I made some Meringue cookies earlier with some leftover egg whites from the other day.. I gave one to Rob and he says, “I think I want another one.” Does that mean I get the seal of approval?

They were actually fairly easy, and I was surprised! They always looked so complicated in pictures, and I’ve only had them once before. I’ve never made them in any case.

I think the trick is to get the meringue right, and if you don’t know the different factors involved in making the stiff peaks required, it would be difficult. I knew about using room-temperature egg whites, and I knew to mix on medium-low on a mixer, and that you have to add the sugar a little at a time so that it will all dissolve instead of becoming one stick mass of goo. But one thing that I didn’t know is that acid helps the foam develop as high as it can go, and that means adding a little lemon juice or cream of tartar or baking soda! Who would’ve thunk it? And yes, I realize that lots of people knew that ha ha!

I asked Rob if he wanted anything on them, and I was thinking some blitzed almonds or something, but nope! He wanted sprinkles! That’s my wittle Robbie:)

>Steph’s Birthday

>A new day, a new week, and a new start I believe, so it warranted a written Blog as apposed to a Vlog.

So I start:

Lol, lol, lol. Had an awesome day with the unadulterated, unapologetic, and unbelievable Steph as it was her birthday today. Brunch was fun, watching Rob pick out boots for her to try on was priceless, and watching yet another random Nicholas Cage movie was ridiculous. And finally, after countless films, I got my wish: Nicholas Cage to die (and not come back ala Sorceror’s Apprentice). Yay to the zombie ninja monks for distracting him long enough to be killed by the demon. Sorry, should have “spolier alerted”.

I felt kinda sick last night at the restaurant, although not because of the actual food. Waking up this morning was pretty shmeggy, and it hasn’t really passed to this point, but at least we had fun today!

>Today Was A Rough One

>I apologize everyone, as I officially breakdown in this video. It’s so late (for me), and I still can’t hardly edit worth shit. Today has just been so hard that I needed to get something out so that it would leave my head nicely and in an orderly fashion. Earlier tonight we had the visitation for my Nanny at their retirement home with family and over a hundred friends.

I was so glad that my family was able to all come together tonight as one cohesive machine, and so happy that Rob was able to attend as well. Even more thankful that when all was done and over with that Rob was there with a huge hug.

Today was rough, but tomorrow will be the true test.
